Following an extensive study of the varied customer demographics across the group of 21 Mercure properties in the UK, I developed 3 distinct menu solutions as part of a group F&B rebranding.
John continues to develop seasonal changes for 2010/11 which started in Febuary 2010. He then created a Chef development team using the chefs from the group and works with them develop and complete the seasonal menus changes. With every menu change John creates an extremely detailed photographic, recipe costing system that is used across the groups intranet system for implementation.
These were all achieved with no additional payroll or food costs to the company.
